I can't help you with actual wire colours, but this should be a cinch to fix IF you have either a circuit tester/multi meter (about £10 from Maplins or such) or at the very least one of those bulb-drivers with a length of wire and a little croc clip on.

Your stereo simply needs a live and an earth for power-up. Yes, admittedly most stereos want a switched live and a permanent live, but I usually find a permanent live from behind the head unit (old Ford stereo), and then I join the two power leads for the head unit together and attach them to this in-car perm live. Find an earth and join the stereo earth to that.

It's possible your Escort has/had/can have an electric ariel, which may account for the 3rd wire (which would go to the new stereo's remote turn on wire which is usually blue or blue & white), UNLESS the 3 wires in-situ are simply: live x 2 (one perm one switched) and earth x 1

All you then need is the speaker loom. These are likely to be similarly coloured, i.e. front right speaker may have a green wire and a green & white white, signifying speaker plus & speaker neg.

Just use your multi-meter to determine/check the pairs, and importantly find out which speaker wire is the positive one. This would be best done by lifting out one speaker to see the wire colours going to it and particularly which colour of that pair goes to live, which on the speaker will be marked in some way, either as '+' or as a blob of paint or such.

Multimeter plus methodical approach = working stereo = happy lass = hand job or similar. :) ...

P.S. Not from me though! ;)
