Replace or refurbish

Apologies for the fairly broad question, but I'm currently in the process of dismantling my 1.9 and I'm now left staring at parts and trying to decide if I should replace them or just give them a clean up and put them back in.  Some kind of examples:

 

Brake servo

Master cylinder

Oil cooler

PAS pump

 

But in general, what's the view in this situation?  I have the car in bits so obviously doing it now would be easier but might not be necessary.  Is there anything I should absolutely 100% replace whilst it's in bits etc

master cylinders are not especially expensive and a safety critical item so yes I would replace that, the rest if they are not faulty then I would do no more than a clean up and paint of the servo.
