Pardon my ignorance, but what am i missing between these 2. I assume its a mount of some sort?

And

What size bolts do i need for the rear part where it bolts to the chassis?

Is that a gti subframe? As i think non gti subframe mounted different to gti and yours is a non gti shell.

i dont think so, its the frame i got with the car which i was lead to beleive was the standard one. The wishbones only have one leg too

there's a mounting on the base model between those two, M8 bolts into the captive nuts in the chassis leg and it has a stud poking down which is M10.

its a base model subframe, track control arms, not wishbones.

If you can find some subframe mounts off a 309 gti as they're solid metal with no rubber in between.

I own a base model 309 and the mounts are not solid metal they still save rubber on. Still available from pug think they were about £30 with the VAT

I was stripping a Xsara VTS and I noticed the subframe mounts look very similar, what is the distance between the mounting bolt holes on the 205 shell?

The Xsara mount looks like it's about 60mm too, I'll unbolt one tomorrow and measure it properly.
