Quick question,

Will my Maniflow manifold, that has the 9 and 10 hole pattern for XU9 & XU10, fit a GTi6 head?

Why are most of this type of manifold not one piece flange and fully welded? Is it simply to aid installation?

Pretty much, otherwise it's an engine-out job!

I don't like the idea of split flanges and springs holding it all together myself.

Split flanges aren't really necessary unless it's a really confined space or there's something in the way that'd stop you fitting it in one go - like a steering column for example. Springs are brilliant as long as your slip-joins fit nice and snug, much better than using bolts which rattle and / or corrode and seize.
