Oil Pressure And Water Temp Senders

I'm assuming that these senders vary their resistance with pressure/temperature, and that the oil pressure and water temperature instruments show the amount of current flowing through them?

 

If so, has anyone any idea of the resistance vs. pressure/temp graph?
